Kue Putu - Traditional Indonesian Snack Made From Rice Flour and Palm Sugar

 Kue Putu is a traditional Indonesian snack made from rice flour and palm sugar, steamed in bamboo tubes, and served with grated coconut. Here's a recipe to make Kue Putu at home:


Ingredients:

For the Dough:

  • 200 grams rice flour
  • 50 grams tapioca flour
  • 150 ml water
  • 1/4 teaspoon salt
  • Pandan leaves (optional for color and aroma)

For the Filling:

  • 150 grams palm sugar (gula Jawa), chopped into small pieces
  • Grated coconut (for serving)

Instructions:

1. Prepare the Dough:

  1. In a mixing bowl, combine rice flour, tapioca flour, and salt.
  2. Gradually add water while mixing until you get a smooth and pliable dough. If using pandan leaves for color and aroma, you can blend them with water before adding to the flour mixture.

2. Prepare the Filling:

  1. Take a small amount of dough and flatten it into a small disc.
  2. Place a small piece of palm sugar in the center of the disc.
  3. Wrap the palm sugar with the dough, forming a small ball. Make sure the palm sugar is completely covered with dough to prevent it from leaking during steaming.

3. Shape the Kue Putu:

  1. Take a bamboo tube (or any cylindrical mold) and lightly grease the inside with oil.
  2. Fill the tube with the dough balls, leaving a small space at the top for steam to expand.
  3. Repeat until all the dough and filling are used.

4. Steam the Kue Putu:

  1. Heat a steamer over medium heat. Once the water is boiling, place the filled bamboo tubes in the steamer.
  2. Steam for about 15-20 minutes, or until the dough is cooked through and the palm sugar filling has melted.

5. Serve:

  1. Once cooked, remove the Kue Putu from the steamer and let them cool slightly.
  2. Carefully push the Kue Putu out of the bamboo tubes onto a serving plate.
  3. Serve the Kue Putu warm, topped with grated coconut.

Tips:

  • Make sure to wrap the palm sugar filling tightly with the dough to prevent it from leaking during steaming.
  • You can adjust the sweetness of the Kue Putu by adding more or less palm sugar according to your preference.
  • If you don't have bamboo tubes, you can use cylindrical molds or even muffin tins as alternatives.
