Ingredients:

For the Pastry Dough:

  • 250g (about 2 cups) all-purpose flour
  • 100g (about 7 tablespoons) butter, chilled and cubed
  • 1/4 teaspoon salt
  • 1/2 cup cold water

For the Filling:

  • 200g mung beans, soaked overnight
  • 100g sugar (adjust to taste)
  • 1/4 teaspoon salt
  • Water for boiling

Instructions:

1. Prepare the Filling:

  1. Rinse the soaked mung beans thoroughly.
  2. In a pot, cover the mung beans with water and bring to a boil.
  3. Reduce heat to a simmer and cook until the beans are soft and easily mashed, about 20-30 minutes.
  4. Drain any excess water from the cooked mung beans.
  5. Mash the cooked mung beans while they are still hot until you get a smooth consistency.
  6. Add sugar and salt to the mashed beans, mixing well. Adjust sweetness according to your taste. Set aside to cool completely.

2. Make the Pastry Dough:

  1. In a mixing bowl, combine the flour and salt.
  2. Add the chilled cubed butter and rub it into the flour mixture using your fingertips until it resembles coarse breadcrumbs.
  3. Gradually add cold water and mix until the dough comes together.
  4. Knead the dough gently until smooth. Wrap it in plastic wrap and refrigerate for at least 30 minutes.

3. Assemble the Kue Pia:

  1. Preheat your oven to 180°C (350°F).
  2. Divide the chilled dough into equal-sized balls.
  3. Flatten each ball into a thin circle using a rolling pin, making sure the edges are thinner than the center.
  4. Place a spoonful of the cooled mung bean filling in the center of each dough circle.
  5. Fold the edges of the dough over the filling and pinch to seal. You can also twist the edges for a decorative finish.
  6. Place the filled pastries on a baking sheet lined with parchment paper.

4. Bake the Kue Pia:

  1. Bake in the preheated oven for about 20-25 minutes or until the pastries are golden brown and crispy.
  2. Remove from the oven and let them cool on a wire rack before serving.

5. Serve:

  1. Enjoy the Kue Pia warm or at room temperature with a cup of tea or coffee.
