Sumping Waluh - Traditional Balinese dessert made from pumpkin
"Sumping Waluh" is a traditional Balinese dessert made from pumpkin (waluh), coconut milk, and rice flour. It's a delightful treat with a slightly sweet and creamy flavor. Here's a recipe for making Sumping Waluh:
Ingredients:
- 500 grams pumpkin (waluh), peeled and cut into chunks
- 200 ml thick coconut milk
- 150 grams rice flour
- 100 grams palm sugar (gula merah), grated or chopped
- 1 pandan leaf (optional, for flavor)
- A pinch of salt
- Banana leaves or aluminum foil for wrapping
Instructions:
Prepare the Pumpkin:
- Peel the pumpkin and cut it into small chunks.
Steam the Pumpkin:
- Place the pumpkin chunks in a steamer basket and steam them until they are soft and fully cooked. This usually takes around 15-20 minutes.
Mash the Pumpkin:
- Once the pumpkin is cooked, transfer it to a mixing bowl and mash it until smooth. You can use a potato masher or fork for this.
Prepare the Coconut Mixture:
- In a saucepan, combine the thick coconut milk, grated or chopped palm sugar, pandan leaf (if using), and a pinch of salt.
- Heat the mixture over medium heat, stirring constantly until the palm sugar is fully dissolved. Let it simmer for a few minutes until it thickens slightly. Remove the pandan leaf if used.
Mix Pumpkin and Rice Flour:
- In the mashed pumpkin, gradually add the rice flour while mixing until well combined. The mixture should have a thick but spreadable consistency.
Shape the Sumping Waluh:
- Take a small amount of the pumpkin mixture and shape it into small cakes or patties.
Wrap with Banana Leaves:
- If using banana leaves, cut them into small rectangles.
- Place each pumpkin cake or patty onto a piece of banana leaf and wrap it neatly, securing the edges with toothpicks or string. Alternatively, you can use aluminum foil for wrapping.
Steam the Sumping Waluh:
- Arrange the wrapped Sumping Waluh on a steamer basket and steam them for about 15-20 minutes, or until they are cooked through.
Serve:
- Once cooked, remove the Sumping Waluh from the steamer.
- Serve them warm, drizzled with additional palm sugar syrup if desired.
