Kue Putri Mandi - Princess Bathing Cake


 "Kue Putri Mandi" is a traditional Indonesian steamed cake that translates to "Princess Bathing Cake." It's a delightful dessert made with a soft and slightly chewy texture, often flavored with pandan or coconut. Here's a basic recipe to make Kue Putri Mandi:

Ingredients:

For the batter:

  • 1 cup rice flour
  • 1/2 cup tapioca flour
  • 1 cup coconut milk
  • 1/2 cup water
  • 1/2 cup granulated sugar
  • 1/4 teaspoon salt
  • Pandan leaves or pandan essence (optional, for flavor)

For the topping (optional):

  • Grated coconut, steamed
  • Granulated sugar, to taste

Instructions:

  1. Prepare the batter:

    • In a mixing bowl, combine the rice flour, tapioca flour, coconut milk, water, sugar, and salt.
    • If using pandan leaves for flavor, tie them into a knot and immerse them in the mixture. Alternatively, you can add a few drops of pandan essence.
    • Stir the batter until all ingredients are well combined and the sugar is dissolved. Let it rest for about 15-30 minutes.
  2. Steam the cake:

    • Prepare your steamer by bringing water to a boil.
    • Meanwhile, prepare small cups or molds by greasing them lightly with oil or lining them with banana leaves for an authentic touch.
    • Once the batter has rested, pour it into the prepared cups or molds, filling them about 3/4 full.
    • Place the cups or molds in the steamer and steam over medium heat for about 20-25 minutes or until the cakes are set and cooked through. They should be firm to the touch.
  3. Prepare the topping (optional):

    • While the cakes are steaming, you can prepare the topping by mixing the grated coconut with granulated sugar to taste. Steam the mixture for a few minutes until heated through.
  4. Serve:

    • Once the cakes are cooked, remove them from the steamer and let them cool slightly.
    • Serve the Kue Putri Mandi warm or at room temperature, topped with the prepared grated coconut if desired.
  5. Storage:

    • Any leftover Kue Putri Mandi can be stored in an airtight container in the refrigerator for a few days. Reheat gently before serving.
