Kue Apem - Traditional Balinese Steamed Cake

 Kue Apem is a traditional Indonesian steamed cake, often enjoyed as a snack or dessert. Here's a recipe to make Kue Apem at home:


Ingredients:

  • 250 grams rice flour
  • 50 grams tapioca flour
  • 200 ml coconut milk
  • 150 ml warm water
  • 150 grams granulated sugar
  • 1/2 teaspoon instant yeast
  • 1/4 teaspoon salt
  • Pandan leaves (optional, for flavor and color)

Instructions:

1. Prepare the Batter:

  1. In a mixing bowl, combine rice flour, tapioca flour, granulated sugar, instant yeast, and salt.
  2. If using pandan leaves for flavor and color, you can blend them with warm water before adding to the flour mixture.
  3. Gradually add coconut milk and warm water into the dry ingredients while stirring continuously until you get a smooth batter. The batter should have a slightly thick consistency.

2. Fermentation:

  1. Cover the bowl with a clean cloth or plastic wrap and let the batter ferment in a warm place for about 1-2 hours, or until it becomes bubbly and doubles in volume.

3. Prepare the Molds:

  1. While the batter is fermenting, prepare small apem molds or cupcake molds. Grease them lightly with oil to prevent sticking.

4. Cooking:

  1. Once the batter has fermented, stir it well to release any trapped air bubbles.
  2. Fill each mold with the batter, leaving a little space at the top for the apem to rise.
  3. Steam the apem over medium heat for about 15-20 minutes, or until cooked through. You can test for doneness by inserting a toothpick into the center of an apem – it should come out clean when done.

5. Serving:

  1. Once cooked, remove the apem from the molds and let them cool slightly before serving.
  2. Serve the apem warm as a delicious snack or dessert.

Tips:

  • You can add toppings such as sesame seeds or grated coconut on top of the apem before steaming for extra flavor and texture.
  • Store any leftover apem in an airtight container at room temperature. They can be reheated by steaming before serving.
