 Jaja Bendu is a traditional cake native to Jembrana, Bali, Indonesia. This cake is quite simple, wrapped in banana leaves. However, Jaja Bendu has become an idol and is always present at various occasions. Among other things, to fulfill religious needs, served in various ceremonies such as Manusa Yadnya, and at official events in government institutions. Bendu is also often used as a gift or souvenir.


Jaja Bendu is made from sticky rice flour filled with a mixture of grated coconut and Balinese sugar, known as "unti." Its increasing popularity has led to Jaja Bendu being widely sold in traditional markets at relatively low prices, ranging from Rp 500 to Rp 1,000. Despite being inexpensive, its taste is not cheap. Making Jaja Bendu is very easy; prepare glutinous rice flour and mix it with grated coconut, then add water until smooth, or better yet, use water from hibiscus leaves and a pinch of salt. Then bake or roast it using a special mixture. The baking process must use a special technique to achieve a thin layer. For the filling, Jaja Bendu is filled with sweet coconut "unti." While rolled pancakes like Dadar Gulung can be filled with coconut "unti" and green beans, Jaja Bendu only contains coconut "unti." The ingredient measurements must be precise when making the Bendu dough. Meanwhile, the rolling technique is the same as for rolled pancakes. Banana leaves are intentionally chosen to wrap Jaja Bendu to keep the cake dry and prevent it from becoming soggy. In addition to looking neater, the aroma of banana leaves makes Jaja Bendu taste even more delicious. However, Jaja Bendu does not last long, only lasting for one day. This sweet Jaja Bendu is best served with coffee.

Dissolve glutinous rice flour with hibiscus flower water gradually, while kneading until the dough is smooth. Heat a round skillet, make thin crepes, set aside.

Make the filling:

Melt the brown sugar, mix it with the grated coconut. Add salt, stir until evenly mixed.

Completion:

Place one crepe on a plate, put the filling mixture, then roll and fold the crepe.
