Jagung Urap is an Indonesian dish featuring sweet corn kernels mixed with a flavorful coconut dressing. It's a delightful combination of sweetness from the corn and richness from the coconut. Here's a traditional recipe for making Jagung Urap:
Ingredients:
For the Coconut Dressing:
- 1 cup grated coconut (fresh or desiccated)
- 2 shallots, finely chopped
- 2 cloves garlic, finely chopped
- 2 red chilies, seeded and finely chopped (adjust according to spice preference)
- 1 teaspoon shrimp paste (terasi), toasted
- 1 teaspoon palm sugar or brown sugar
- 1 teaspoon tamarind paste, dissolved in 2 tablespoons of warm water
- Salt to taste
For the Sweet Corn:
- 2 cups sweet corn kernels (fresh or frozen)
- 1/2 cup green beans, thinly sliced
- 1/2 cup carrot, julienned
- 1/2 cup cabbage, thinly sliced
- 1/2 cup bean sprouts (optional)
- 2 kaffir lime leaves, thinly sliced (optional)
- Salt to taste
Instructions:
1. Prepare the Coconut Dressing:
- Heat a pan over medium heat and dry roast the grated coconut until golden brown and fragrant. Set aside.
- In the same pan, add a little oil and sauté the shallots, garlic, and red chilies until fragrant.
- Add the toasted shrimp paste and palm sugar, and stir until the sugar is dissolved.
- Add the roasted coconut back to the pan and mix well.
- Pour in the tamarind water, stirring continuously until the mixture is well combined and slightly thickened. Season with salt to taste. Remove from heat and set aside.
2. Prepare the Sweet Corn:
- In a pot of boiling water, blanch the sweet corn kernels, green beans, carrot, cabbage, and bean sprouts for about 2-3 minutes until they are slightly tender but still crisp. Drain and set aside.
- Season the blanched vegetables with salt to taste.
3. Assemble the Jagung Urap:
- In a large mixing bowl, combine the blanched vegetables with the prepared coconut dressing. Toss well to coat evenly.
- Garnish with thinly sliced kaffir lime leaves if using.
4. Serve:
- Transfer the Jagung Urap to a serving dish.
- Serve it as a side dish or as a main course accompanied by steamed rice or other Indonesian dishes.
