DODOL SALAK - Balinese Sweet Delicacy

 Dodol Manis is a traditional Indonesian sweet delicacy made from coconut milk, palm sugar, and glutinous rice flour. Here's a recipe to make Dodol Manis:


Ingredients:

  • 500 ml coconut milk
  • 250 grams palm sugar (gula aren), grated or chopped
  • 200 grams glutinous rice flour
  • 50 grams rice flour
  • 1/4 teaspoon salt
  • Banana leaves or parchment paper for wrapping (optional)

Instructions:

1. Prepare the Coconut Milk Mixture:

  1. In a saucepan, heat the coconut milk over medium heat until it starts to simmer.
  2. Add the grated or chopped palm sugar into the simmering coconut milk.
  3. Stir continuously until the palm sugar is completely dissolved and the mixture becomes smooth.

2. Mix the Flour:

  1. In a separate bowl, mix the glutinous rice flour, rice flour, and salt until well combined.

3. Cook the Dodol:

  1. Gradually add the flour mixture into the coconut milk mixture while stirring continuously to avoid lumps.
  2. Reduce the heat to low and continue stirring the mixture constantly for about 1-2 hours until it thickens and becomes sticky. Be patient as this process requires frequent stirring to prevent burning and achieve the desired consistency. The dodol is ready when it becomes glossy and can hold its shape.
  3. Once the dodol reaches the desired consistency, remove it from the heat and let it cool slightly.

4. Shape and Wrap:

  1. While the dodol is still warm but manageable, shape it into small bite-sized pieces or into logs.
  2. If desired, wrap the dodol pieces in banana leaves or parchment paper to maintain their shape and prevent them from sticking together.

5. Serve:

  1. Let the dodol cool completely before serving.
