Dadar Gulung - Balinese rolled pancakes



 Dadar Gulung, also known as Indonesian rolled pancakes, is a delicious dessert made from thin pancakes rolled with a sweet coconut filling. Here's a simple recipe for making Dadar Gulung:

Ingredients:

For the Pancake Batter:

  • 1 cup all-purpose flour
  • 1 cup coconut milk
  • 1 egg
  • 1/4 teaspoon salt
  • 1/4 teaspoon pandan extract (for color and flavor) - optional
  • 1/4 cup water (adjust consistency if needed)
  • Butter or oil for frying

For the Filling:

  • 1 cup grated coconut (fresh or desiccated)
  • 1/2 cup palm sugar (gula Melaka), grated or chopped
  • 1 pandan leaf, knotted (optional for added flavor)
  • A pinch of salt

Instructions:

1. Prepare the Filling:

  1. Heat a pan over medium heat and add the grated coconut.
  2. Add the palm sugar, pandan leaf (if using), and a pinch of salt.
  3. Cook, stirring continuously, until the sugar has melted and the mixture is well combined. This usually takes about 5-7 minutes.
  4. Remove from heat and let the filling cool down.

2. Make the Pancake Batter:

  1. In a mixing bowl, whisk together the flour, coconut milk, egg, salt, and pandan extract (if using) until smooth.
  2. Add water gradually to achieve a thin pancake batter consistency. It should be pourable but not too runny.
  3. Let the batter rest for about 10-15 minutes.

3. Cook the Pancakes:

  1. Heat a non-stick frying pan over medium heat and lightly grease it with butter or oil.
  2. Pour a ladleful of pancake batter into the pan and swirl it around to coat the bottom evenly.
  3. Cook the pancake for about 1-2 minutes until the edges start to lift and the bottom is golden brown.
  4. Flip the pancake and cook for another 1-2 minutes until cooked through. Remove from the pan and repeat with the remaining batter.

4. Assemble the Dadar Gulung:

  1. Place a spoonful of the coconut filling along one edge of the pancake.
  2. Roll the pancake tightly over the filling, tucking in the sides as you go.
  3. Repeat with the remaining pancakes and filling.

5. Serve:

  1. Slice the rolled pancakes into smaller pieces if desired.
  2. Serve Dadar Gulung warm or at room temperature as a delightful snack or dessert.
