Dadar Gulung - Balinese rolled pancakes
Dadar Gulung, also known as Indonesian rolled pancakes, is a delicious dessert made from thin pancakes rolled with a sweet coconut filling. Here's a simple recipe for making Dadar Gulung:
Ingredients:
For the Pancake Batter:
- 1 cup all-purpose flour
- 1 cup coconut milk
- 1 egg
- 1/4 teaspoon salt
- 1/4 teaspoon pandan extract (for color and flavor) - optional
- 1/4 cup water (adjust consistency if needed)
- Butter or oil for frying
For the Filling:
- 1 cup grated coconut (fresh or desiccated)
- 1/2 cup palm sugar (gula Melaka), grated or chopped
- 1 pandan leaf, knotted (optional for added flavor)
- A pinch of salt
Instructions:
1. Prepare the Filling:
- Heat a pan over medium heat and add the grated coconut.
- Add the palm sugar, pandan leaf (if using), and a pinch of salt.
- Cook, stirring continuously, until the sugar has melted and the mixture is well combined. This usually takes about 5-7 minutes.
- Remove from heat and let the filling cool down.
2. Make the Pancake Batter:
- In a mixing bowl, whisk together the flour, coconut milk, egg, salt, and pandan extract (if using) until smooth.
- Add water gradually to achieve a thin pancake batter consistency. It should be pourable but not too runny.
- Let the batter rest for about 10-15 minutes.
3. Cook the Pancakes:
- Heat a non-stick frying pan over medium heat and lightly grease it with butter or oil.
- Pour a ladleful of pancake batter into the pan and swirl it around to coat the bottom evenly.
- Cook the pancake for about 1-2 minutes until the edges start to lift and the bottom is golden brown.
- Flip the pancake and cook for another 1-2 minutes until cooked through. Remove from the pan and repeat with the remaining batter.
4. Assemble the Dadar Gulung:
- Place a spoonful of the coconut filling along one edge of the pancake.
- Roll the pancake tightly over the filling, tucking in the sides as you go.
- Repeat with the remaining pancakes and filling.
5. Serve:
- Slice the rolled pancakes into smaller pieces if desired.
- Serve Dadar Gulung warm or at room temperature as a delightful snack or dessert.
Enjoy your homemade Dadar Gulung!
