Sumping Pisang - Traditional Balinese Snack


 "Sumping Pisang" is a traditional Balinese snack made from bananas, grated coconut, and rice flour. It's similar to other Indonesian snacks like "Kue Lumpur" or "Klepon." Here's a recipe to make Sumpring Pisang:

Ingredients:

  • 2 ripe bananas
  • 100 grams grated coconut
  • 100 grams rice flour
  • 50 grams palm sugar (gula merah), grated or chopped
  • 1/4 teaspoon salt
  • Pandan leaves (optional, for flavor)
  • Banana leaves or aluminum foil for wrapping

Instructions:

  1. Prepare the Palm Sugar Syrup:

    • In a saucepan, combine the grated or chopped palm sugar with a little water.
    • Heat the mixture over medium heat, stirring constantly until the palm sugar is fully dissolved. Let it simmer for a few minutes until it thickens slightly. Remove from heat and set aside.
  2. Prepare the Bananas:

    • Peel the ripe bananas and mash them in a bowl until smooth.
  3. Mix Ingredients:

    • In a separate bowl, mix the mashed bananas, grated coconut, rice flour, and salt until well combined. If desired, you can also add pandan leaf extract for additional flavor.
  4. Shape the Sumpring Pisang:

    • Take a small amount of the banana mixture and shape it into small balls or oval shapes, about 2-3 cm in diameter.
  5. Wrap with Banana Leaves:

    • If using banana leaves, cut them into small rectangles.
    • Place each banana mixture onto a piece of banana leaf and wrap it neatly, securing the edges with toothpicks or string. Alternatively, you can use aluminum foil for wrapping.
  6. Steam the Sumpring Pisang:

    • Arrange the wrapped Sumpring Pisang on a steamer basket and steam them for about 15-20 minutes, or until they are cooked through.
  7. Serve:

    • Once cooked, remove the Sumpring Pisang from the steamer.
    • Serve them warm, drizzled with the prepared palm sugar syrup.
  8. Enjoy:

    • Sumpring Pisang is best enjoyed warm as a delicious Balinese snack or dessert.

Feel free to adjust the sweetness according to your preference. You can also experiment with adding other ingredients like sesame seeds or chopped peanuts for added texture and flavor.
