LEMPER AYAM PEDAS - Spicy sticky rice filled with seasoned shredded chicken

 "Lemper" is a popular Indonesian dish made of sticky rice filled with seasoned shredded chicken, beef, or fish, then wrapped in banana leaves and steamed. It's a delicious savory snack or side dish. Here's a recipe to make Lemper:

Ingredients:

For the sticky rice:

  • 2 cups glutinous rice (sticky rice)
  • 2 cups coconut milk
  • 1 teaspoon salt
  • Banana leaves for wrapping

For the filling:

  • 2 cups shredded cooked chicken, beef, or fish (you can also use tempeh or tofu for a vegetarian option)
  • 2 cloves garlic, minced
  • 2 shallots, minced
  • 4 Chili
  • 2 tablespoons cooking oil
  • 2 tablespoons sweet soy sauce (kecap manis)
  • 1 teaspoon ground coriander
  • 1 teaspoon ground turmeric
  • Salt and pepper to taste

Instructions:

  1. Prepare the sticky rice:

    • Rinse the glutinous rice under cold water until the water runs clear. Drain well.
    • In a pot, combine the glutinous rice, coconut milk, and salt. Bring to a boil over medium heat.
    • Once boiling, reduce the heat to low and simmer, covered, for about 15-20 minutes, or until the rice is cooked and the liquid is absorbed. Set aside to cool slightly.
  2. Prepare the filling:

    • Heat the cooking oil in a pan over medium heat. Add the minced garlic, chili and shallots, and sauté until fragrant.
    • Add the shredded chicken, beef, or fish to the pan, along with the sweet soy sauce, ground coriander, ground turmeric, salt, and pepper. Stir well to combine.
    • Cook for a few minutes until the filling is heated through and well-coated with the spices. Remove from heat and let it cool slightly.
  3. Assemble the lemper:

    • Cut the banana leaves into rectangles, about 6 inches wide. Lightly steam or pass them over an open flame to make them pliable.
    • Place a spoonful of the cooked sticky rice onto the center of a banana leaf rectangle, then flatten it into a thin layer.
    • Add a spoonful of the filling on top of the rice, then fold the banana leaf over to enclose the filling and form a rectangular packet. Secure the ends with toothpicks or kitchen twine.
    • Repeat with the remaining rice and filling.
  4. Steam the lemper:

    • Place the wrapped lemper packets in a steamer basket, making sure they are not stacked on top of each other.
    • Steam the lemper over medium heat for about 20-25 minutes, or until the rice is soft and the filling is heated through.
  5. Serve:

    • Let the lemper cool slightly before serving. Remove the banana leaves before eating.
