Laklak Pisang - Traditional Balinese Pancake
"Laklak" is a traditional Balinese dessert, typically served as a snack or breakfast item. It's made from rice flour and coconut milk, often flavored with pandan leaf and served with palm sugar syrup or grated coconut. Here's a basic recipe for making laklak:
Ingredients:
- 1 cup rice flour
- 1 cup coconut milk
- 1/4 cup water
- 1/4 teaspoon salt
- 1 tablespoon sugar (optional)
- Pandan leaf extract or pandan essence (for flavor and color)
- Banana leaves, cut into small squares for lining the pan
- Palm sugar syrup or grated coconut for serving
Instructions:
Prepare the Batter:
- In a mixing bowl, combine rice flour, coconut milk, water, salt, sugar (if using), and pandan leaf extract or essence. Mix well until you get a smooth batter. The consistency should be similar to pancake batter.
Cooking Laklak:
- Heat a non-stick pan or a traditional Balinese griddle over medium heat.
- Place the banana leaf square on the pan. Pour a ladleful of batter onto the banana leaf, spreading it evenly to form a thin layer.
- Cover the pan and cook for about 2-3 minutes, or until the bottom is lightly golden and the top is set.
- Flip the laklak using a spatula and cook for another 1-2 minutes on the other side until cooked through.
- Remove from the pan and repeat the process with the remaining batter.
Serving:
- Serve the laklak warm, drizzled with palm sugar syrup or sprinkled with grated coconut.
