Ingredients:

For the dough:

Instructions:

  1. Prepare the filling:

    • Cut the palm sugar into small cubes. Each cube should be roughly the size of a marble.
  2. Prepare the dough:

    • In a mixing bowl, combine the glutinous rice flour, pandan juice, water, and a pinch of salt.
    • Knead the mixture until it forms a smooth, pliable dough. If the dough is too dry, add a little more water. If it's too wet, add more glutinous rice flour.
  3. Shape the Klepon:

    • Pinch off a small portion of the dough and flatten it in your palm.
    • Place one cube of palm sugar in the center of the flattened dough.
    • Fold the dough over the palm sugar to enclose it completely and roll it into a smooth ball. Make sure there are no cracks in the dough.
  4. Boil the Klepon:

    • Bring a pot of water to a gentle boil.
    • Carefully drop the Klepon into the boiling water. Cook them in batches to avoid overcrowding.
    • Cook the Klepon for about 3-4 minutes or until they float to the surface. This indicates that they are cooked through.
  5. Coat with grated coconut:

    • While the Klepon are cooking, mix the grated coconut with a pinch of salt in a shallow dish.
    • Once the Klepon are cooked, remove them from the boiling water using a slotted spoon and immediately roll them in the grated coconut mixture until they are evenly coated.
  6. Serve:

    • Serve the Klepon warm or at room temperature. They are best enjoyed fresh on the same day they are made.
  7. Storage:

    • If you have any leftover Klepon, store them in an airtight container in the refrigerator. Reheat gently in a steamer before serving.
