Kaliadrem - Traditional Balinese Cake


 

"Kaliadrem" is a traditional Balinese snack made from grated coconut, palm sugar, and rice flour. It's often enjoyed as a sweet treat or dessert. Here's a basic recipe for making Kaliadrem:

Ingredients:

  • 200 grams grated coconut
  • 100 grams palm sugar (gula merah), grated or chopped
  • 100 grams rice flour
  • 1/4 teaspoon salt
  • Banana leaves or aluminum foil for wrapping

Instructions:

  1. Prepare the Palm Sugar Syrup:

    • In a saucepan, combine the grated or chopped palm sugar with a little water.
    • Heat the mixture over medium heat, stirring constantly until the palm sugar is fully dissolved. Let it simmer for a few minutes until it thickens slightly. Remove from heat and set aside.
  2. Mix Grated Coconut and Rice Flour:

    • In a mixing bowl, combine the grated coconut, rice flour, and salt. Mix well until evenly combined.
  3. Shape the Kaliadrem:

    • Take a small amount of the coconut mixture and shape it into small cylindrical or oval shapes, about 2-3 inches long.
  4. Wrap with Banana Leaves:

    • If using banana leaves, cut them into small rectangles.
    • Place each coconut mixture onto a piece of banana leaf and wrap it neatly, securing the edges with toothpicks or string. Alternatively, you can use aluminum foil for wrapping.
  5. Steam the Kaliadrem:

    • Arrange the wrapped Kaliadrem on a steamer basket and steam them for about 15-20 minutes, or until they are cooked through.
  6. Serve:

    • Once cooked, remove the Kaliadrem from the steamer.
    • Serve them warm, drizzled with the prepared palm sugar syrup.
  7. Enjoy:

    • Kaliadrem is best enjoyed warm as a delicious Balinese snack or dessert.

Feel free to adjust the sweetness according to your preference. You can also experiment with adding pandan leaf extract for additional flavor, or sprinkling sesame seeds on top before steaming for added texture.
