Pie Susu - Indonesian pastry that originated from Bali


 

Pie Susu is a popular Indonesian pastry that originated from Bali. It's a sweet and creamy custard pie with a flaky crust. Here's a simple recipe for making Pie Susu:

Ingredients:

For the Crust:

  • 250g (about 2 cups) all-purpose flour
  • 125g (about 1/2 cup) unsalted butter, cold and cubed
  • 1/2 teaspoon salt
  • 1 egg yolk
  • 2-3 tablespoons ice water

For the Filling:

  • 400ml (about 1 2/3 cups) sweetened condensed milk
  • 100ml (about 1/2 cup) evaporated milk
  • 2 egg yolks
  • 1 tablespoon all-purpose flour
  • 1/4 teaspoon vanilla extract

Instructions:

1. Make the Crust:

  1. In a mixing bowl, combine the flour and salt.
  2. Add the cold cubed butter to the flour mixture.
  3. Using your fingertips or a pastry cutter, rub the butter into the flour until it resembles coarse breadcrumbs.
  4. Add the egg yolk and 2 tablespoons of ice water to the mixture, and gently mix until the dough comes together. Add more ice water if needed.
  5. Shape the dough into a ball, wrap it in plastic wrap, and refrigerate for at least 30 minutes.

2. Prepare the Filling:

  1. In a bowl, whisk together the sweetened condensed milk, evaporated milk, egg yolks, all-purpose flour, and vanilla extract until smooth and well combined. Set aside.

3. Assemble and Bake the Pie:

  1. Preheat your oven to 180°C (350°F).
  2. Roll out the chilled dough on a floured surface into a circle about 1/8 inch thick.
  3. Carefully transfer the rolled-out dough to a greased pie dish, pressing it gently into the bottom and sides.
  4. Pour the prepared filling into the pie crust, spreading it out evenly.
  5. Bake in the preheated oven for about 25-30 minutes or until the filling is set and the crust is golden brown.
  6. Remove the pie from the oven and let it cool completely before slicing and serving.

4. Serve:

  1. Once cooled, slice the Pie Susu into wedges.
  2. Serve at room temperature as a delicious dessert or snack.
