Pie Susu - Indonesian pastry that originated from Bali
Pie Susu is a popular Indonesian pastry that originated from Bali. It's a sweet and creamy custard pie with a flaky crust. Here's a simple recipe for making Pie Susu:
Ingredients:
For the Crust:
- 250g (about 2 cups) all-purpose flour
- 125g (about 1/2 cup) unsalted butter, cold and cubed
- 1/2 teaspoon salt
- 1 egg yolk
- 2-3 tablespoons ice water
For the Filling:
- 400ml (about 1 2/3 cups) sweetened condensed milk
- 100ml (about 1/2 cup) evaporated milk
- 2 egg yolks
- 1 tablespoon all-purpose flour
- 1/4 teaspoon vanilla extract
Instructions:
1. Make the Crust:
- In a mixing bowl, combine the flour and salt.
- Add the cold cubed butter to the flour mixture.
- Using your fingertips or a pastry cutter, rub the butter into the flour until it resembles coarse breadcrumbs.
- Add the egg yolk and 2 tablespoons of ice water to the mixture, and gently mix until the dough comes together. Add more ice water if needed.
- Shape the dough into a ball, wrap it in plastic wrap, and refrigerate for at least 30 minutes.
2. Prepare the Filling:
- In a bowl, whisk together the sweetened condensed milk, evaporated milk, egg yolks, all-purpose flour, and vanilla extract until smooth and well combined. Set aside.
3. Assemble and Bake the Pie:
- Preheat your oven to 180°C (350°F).
- Roll out the chilled dough on a floured surface into a circle about 1/8 inch thick.
- Carefully transfer the rolled-out dough to a greased pie dish, pressing it gently into the bottom and sides.
- Pour the prepared filling into the pie crust, spreading it out evenly.
- Bake in the preheated oven for about 25-30 minutes or until the filling is set and the crust is golden brown.
- Remove the pie from the oven and let it cool completely before slicing and serving.
4. Serve:
- Once cooled, slice the Pie Susu into wedges.
- Serve at room temperature as a delicious dessert or snack.
